Red Wine Vingar Rice Salad with Mint and Parsley

Today’s simple recipe comes from the mind of U. Tasty and light, this salad is a great side or entree for lunch or dinner.






Rice salad for 4 people

1 cup long grain rice,

3 green onions

8 leaves fresh mint, or more depending on your preference

Put the rice in a large pot, add a ½ teaspoon salt, or to your liking, boil for 10 to 15 minutes, until rice is almost done.  Pour rice into a sieve under running cold water.  Then drain the rice and put into a bowl.  Cut the green onions into ¼ inch pieces and add to rice, chop parsley and mint leaves and add to rice.  Add half of the salad dressing stir and taste.  Add more dressing, salt and pepper if necessary.  Enjoy!


¼ cup red wine vinegar

1 teaspoon Dijon mustard

½ cup Olive oil, or vegetable oil

¼ cup of water

Salt and pepper

Whisk mustard and vinegar, than add oil, water, salt and pepper as needed, whisk until well combined
