Here is another one of U’s creations, a simple refreshing Summer tomato everyone can enjoy.
Take about 4 to 6 ripe tomatoes, preferably on the vine tomatoes
Cut them into half and scoop out some of the seeds, than cut each half into four or six slices into a bowl. Add:
a half onions, sliced,
A handful of parsley, flat or Italian type, chopped
Make the vinaigrette, see below. Pour some over tomatoes. (You will have left over vinaigrette, use it for another salad).
Best if done an hour or so before eating. Enjoy!
¼ cup red wine vinegar
1 teaspoon Dijon mustard
½ cup Olive oil, or vegetable oil
¼ cup of water
Salt and pepper
Whisk mustard and vinegar, than add oil, water, salt and pepper as needed, whisk until well combined
