Chicken and Veggie Shish Kabobs

Serves 4 people
8 white or brown mushrooms
1 whole onion cut into 8 pieces
8 small tomatoes
1 each read and yellow pepper, cut into 2 inch chunks
 
Put one of each on a skewer and put aside, should be enough for 8 little skewers.
 
 4 small to medium size chicken breast, skinned and cut into bite size chunks
 
16 skewers
 
Put in a bowl and add your favorite marinade.  (mine was Garlic and peppercorn).  Let stand for a few minutes, then put about 4 pieces per skewer.  Make 8 little skewers.  Put aside.
 
For the vegetable skewers, prepare:
Put some vegetable oil in a small bowl and add a handful of herbs de province.  Then use a brush to brush some of this oil mixture on to the vegetable skewers.
 
Heat your grill to medium heat, (I used some foil to protect the skewers) and grill for 10 to 15 minutes, or until done to your liking.  Make sure you turn them occasionally and brush more of the oil mixture as needed.  Remove these skewers and put aside.
 
Put the chicken skewers and grill on low heat ( this way they don’t dry out as much ).  Grill for about  15 minutes, or until done.
 
Serve with rice and a salad……delicious!
