Omelets!

Hi All,

Check out this yummy breakfast treat!

Easy omelet recipe per person

2 whole eggs

One slice of ham, cut into small pieces

¼ small to medium yellow onion, sliced thinly

¼ roma tomato, sliced thinly

1 tbl spoon oil for frying

A qtr inch slice of Monterey jack cheese, cut into strips

Salt and pepper to taste

Crack the eggs into a small bowl, with a fork, whisk till well combined. Cut ham into small pieces.  Slice onion thinly and cut the cheese abut ¼ inch thick.

Heat the oil in the pan and add the eggs, top off with your ingredients and cover the pan.  Cook for a few minutes.  Check occasionally for done-ness.   Slide the omelet on the plate and fold over.  Serve with your favorite condiments.
