Perfect Summer Time Food: Grilled Veggies

Grilled vegetables for 4 people

 One red bell pepper, cut into inch squares

One yellow bell pepper, cut into inch squares

One yellow onion, cut into half, than half again and each quarter into half again ( 8 pieces total)

Eight white mushrooms cut in half

One Italian zucchini, cut into qtr inch slices, length wise

1 Tbl spoon of herbs de Province

Some garlic powder

2 or more Tbl spoons of vegetable oil

1 to 2 Tbl spoon Balsamic Vinegar

Salt and pepper

 Cut all vegetables into bite size, put them into a large bowl

Add about a table spoon of herbs de province and some garlic powder

Add the oil and mix well.

 Heat the grill on low to medium heat and put a piece of aluminum foil on top of the grill, so that the pieces don’t fall through.  Cover grill, but check every few minutes.  Turn vegetables until all sides are a bit burnt and cooked through.  It takes maybe about 20 minutes.

After the vegetables are done, add a little balsamic vinegar, salt and pepper to your taste.
