Hi all, This is U last recipe until she comes back from Switzerland. ENJOY! 8 medium sized potatoes, peeled 1 medium yellow onion, thinly sliced ½ or more loop of kielbasa sausage, thinly sliced Some oil, maybe 2 Tbl. Spoons vegetable oil Salt & pepper to taste This will take about 1 hour for the potatoes to be done! ( or you can par-boil the potatoes, which will cut down on frying time by at least half) Peel the potatoes and cut them into ¼ inch rounds. Put oil into the frying pan and heat it, medium heat, add the cut potatoes and cover them with a lid. Cook over rather low heat, but keep covered. Ever so often take the spatula and stir a bit. After 30 minutes or so, when the potatoes are ¾ done, ( take a fork and poke the potato to see its doneness) add the sliced onions and cover the pan again. Turn up the heat a bit and after like 5 minutes mix the onion slices with the potatoes and add the sliced kielbasa sausage and cover. By now the potatoes should be cooked through and they can brown in the pan, add more oil if needed. Do not burn the onions or the potatoes. Add salt and pepper to your taste. They should be done, somewhat fried and tasty from the onions and kielbasa. Serve with a side vegetable ( ours was carrots) and a salad. Our family and students love this dish.
